June Farmbox- Cream of Asparagus

To make Cream of  Asparagus soup, you'll need the following ingredients:

 

Ingredients:

- 1 pound of fresh asparagus

- 1 onion, chopped

- 2 cloves of garlic, minced

- 4 cups of raw milk

- 2 tablespoons of butter

- Salt and pepper to taste

- Fresh herbs for garnish (optional)

 

Instructions:

1. Wash the asparagus thoroughly and trim off the tough ends. Cut the asparagus into 1-inch pieces.

2. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until the onion is soft and translucent.

3. Add the asparagus pieces to the pot and sauté for a few minutes until they are slightly tender.

4. Pour in the raw milk and bring the mixture to a gentle simmer. Let it cook for about 15-20 minutes, or until the asparagus is very tender.

5. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can use a regular blender and puree the soup in batches.

6. Season the soup with salt and pepper to taste.

7. Ladle the soup into bowls and garnish with fresh herbs if desired.
